Course evaluation/feedback help

Hello! I am curious if anyone here in higher education utilizes the feedback feature within courses in Moodle for students to complete at the end of the course? If so, are you using the feedback tool within Moodle? Or are you using an outside evaluation tool?

Our site used to be set so that instructors could not view course evaluations until 2 weeks after the last day of classes, however, this was implemented by my predecessor and Open LMS support is unaware of a way to implement a similar setting. Ideally we would not want instructors to have access until after a course has already closed, so that students feel safe submitting course evaluations and do not fear that they may be used against them.
