Tracking Gen Ed Outcomes in Moodle

Our institution had been using Legacy Outcome to track Gen Ed outcomes (like Critical Thinking, Information Literacy, etc.). However, we were hoping to revamp the process and make it better. I see there are options, legacy outcomes, regular outcomes, and competencies, etc. but I have just started researching the differences between these all and writing up the process/pros and cons of using each. 

Does your institution use a particular feature in Moodle to track outcomes if so what are you using? What do you like/dislike about it?
